Plum and Almond FlanIngredients

1 sponge flan case

Plum or damson jam

A small pack of marzipan

Fresh, frozen or tinned plums

I usually buy or receive from friends, fresh plums when they are plentiful, then cut them in half, take out the stones and freeze them ready for use.

 

Method

Spread the inside of the flan with a good layer of jam.  This can be done while the flan is still frozen.

Cut the marzipan into slices and cover the jam.

Finally cover the marzipan with the plums, flat side down, making sure no marzipan is showing.

Bake in the oven (180 c ) for 20 to 30 mins until plums are soft and flan case is crisp.  If flan case starts to burn cover with tin foil.

The marzipan will become soft and chewy inside the flan.  It is delicious served hot with custard, cream or ice cream and equally delicious served cold from the fridge.
